MY RAT SNAKE HIBERNATING???

i have an adult yellow rat snake (7.5 feet long 2 inches thick) he suddenly wont come out of hiding and seems almost paranoid when picked up (flinching from the slightest touch)the cage is 5 feet wide, 6 feet tall, 5 feet deep.( i built it myself with plexiglass and two by fours and lag bolts)it is wedge shaped also. the temp is generally around 75-85 farenheight. he has a size 13 nike shoebox as a hidey hole he also has a HUGE hollow castle he crawls in covering the back wall of the vivarium.a very large water bowl that i religiously change once a day.
i am at my wits end and need help on this issue.......what gives with my snake?
