The only thing in her cage is a large water bowl, a cardboard hidebox and some drift wood. The bedding is Aspen and shes in a 40 gallon critter cage. Is she not getting enough humididty or something?

If it is single shed scales (and not actual scales) then there is a humididty problem. Did she go opaque? If she did and is now having a problem shedding, take a pillow case and soak it, ring it out a little (not totally) and place her in it, leave her for a day (or two) and this should take care of it.
