Difference between an everglades and yellow rat

I am not sure what I have but it is either an everglades or yellow rat snake. It has a a red tongue. I heard that the rats with the red tongue are everglades. Is this a sure thing or possibility? Which snake, the everglades or yellow turns out to be a prettier pet? Is the everglades rat protected in the wild or listed as endangered or threatened? Thanks for your information and help.
