The attitude has a tremendous amount to do with snakes. I understand what you are saying but I still believe much of the indifference to the roundups is a result of the prevailing opinion towards snakes.
Most people, as you suggested, would not have a problem with cattle being the subject for such an activity, but in that instance, cattle are already established as one of the main food sources in this country, and the killing of them is everyday practice.
Snakes however, are regarded by most to be dangerous creatures who serve little viable purpose in nature. This ignorance, coupled with the dislike of snakes by the majority of the population is why the average person does not object to their mass slaughter.
