Many new introductions go through an adjustment period. Until they get comfortable (especially shy animals), they will likely not eat. They will come around. Since it's been less than a week, just be patient and continue to offer the right mix of foods and they will reward you with trust after some time has passed.
If their weight is in check, they should be okay. Another thought too is that these turtles most likely are wild caught adults which take some time to adjust. Moving, whether wild or long term captives, almost always requires and adjustment.
