Shredded Co-Co Husk

I use shredded Co-Co Husk as my substrate and I like it a lot. It really keeps the humidity up in the tank for a longer time. Recently I have had mushrooms popping up out of the stuff (proving the humidity is good). Is this ok? I've been yanking them out. I ate one but nothing happened!! :)- just kidding!

Has anyone elsy ever had this happen to them?
