Collard greens for Star tort?

I feed my Stars mainly dandelion greens right now since grocery stores are selling them. I add some mustard greens & endive from time to time. Mine will also eat bermuda & timothy grass but like you I have to wait for them to grow back so I started planted multiple planters with the grass so I can alternate while waiting for them to grow back.

: Is this a high fiber plant and ok for stars? Cant seem to find any info on them, just how to cook them with grits.
