males rarely exceed 14 inches in length. Females around 22 inches (that's almost two feet long). This measurement refers to shell length, and softshells have very long necks as well. Softshells are also fast swimmers that need lots of space to exercise properly.

You can chop up things it has trouble with but these guys are pretty good at destroying their own food, and I think in some cases it can be stimulating for them to do so, rather than being served bite size pieces all the time. I regularly leave out large vegetables for my boxies, so they have to work at it and roll it around and stuff. They seem to prefer it... maybe it just stays fresh longer.

Pet store that sells aquarium fish. Or you can go get things like water hyacinth from a nursery that has pond plants.
