I've caught plenty of Softshells and I have to admit my way isn't always the smartest but it works . I just use my hands but I amost always catch soft shells in a few inches of water or a few feet. I have never caught any in real deep water. I would say use a net. But if you don't already know they have very long knecks and they can easily reach around to about halfway down their shell so watch out as their bite can be quite painful.
