How much should he be eating?

I know this isn't exactly the right forum, but I wanted an opinion from people who have large turtles that eat live fish. I've got an 8 inch matamata and he's polished off 4 dozen fish in the last week (he finished 2 dozen today and looks very pleased with himself). I want to make sure I'm feeding him enough, but I don't want to feed him too much (I've heard it's bad for turtles). About how many fish should a turtle that size be eating? Please note he doesn't eat anything besides live fish.
