pond care for winter?

I just recently this fall set my common snapper up in a 100 gallon pond. Right now I have a submerable heater. It is a 300 watt heater, and it is maintaing a temp. range of 55-70F. I was wondereing if I should inducing hibernation or how I should go about taking care of his water over the winter? I live in Atlatna, GA so the winters are fairly mild. What pond plants are good for snappers to eat and are there any ones that he will not be interested in that can thrive in the pond?
