I currently have a 6" alligator snapper that I feed Reptomin as that is what the original owner raised him on and he told me that he achieved this growth within one year with 80-degree water (on the deep side).
A few years ago, I had two common snappers that I had found one year apart. I fed them Zoo Med floating pellet food because I had used that on previous alligator snappers I got from John Richards who recommends the Zoo Med. On the Zoo Med the first snapper grew from a hatchling to 3-4 inches in the year I had him before I released him. The second hatchling showed the same (to me) rapid growth on the pellets and I did not have the benefit of UV lighting to enhance it.
I would suggest you try a pellet food such as one of the brands I have mentioned and see in 6-12 months what the growth looks like. UV lighting might be of additional benefit.
