I haven't had any animals pinned by rocks in the enclosure but I have had the rocks shift and hit the glass (fortunately it didn't break), so I don't bother with rocks in the terrariums anymore. Alot depends on your substrate I think. Products like aspen and Carefresh aren't what I'd consider as stable for things like rocks (of course, what would be stable enough?). When I've done a public displays I've used rocks, but it's only a temporary setup. In their permanent setups I use assorted, cut clay pots however.

If you do decide to use rocks and stack them you could "glue" them together with a good aquarium silicone. For that matter you could glue them to the bottom of the enclosure...but future maintenance would be kind of a pain. Rocks definitely give that natural look...however!
