Birch plywood for racks and cages your thoughts?

I am making a rack for my crested geckos and was wondering what everyone thought of Birch. I plan on using it as it does not warp as easy as the lighter plywoods. should I put a coat of polyurethane or is it fine just the way it is? I just don't want it to off gas. I plan on using shelving paper on the top of each shelf so the lizards don't actually touch the wood side.
