I tap them gently and they run up the side of the tank onto the rim, where they want to jump. The only thing there for them to jump to is my hand, so they jump onto it thinking they are escaping my other hand that tapped them in the first place. Then I just let them run around on me. If they get up to my shoulder I place my hand palm down in their path and they walk onto the back of my hand. I've noticed they are less threatened by the back of my hand than the front of it. I'd also recommend handling them late in the evening, more on their time. If you pick them up every day during the day that's like someone waking you up in the middle of the night every night. I'd be jumpy too :-)
