How do I calm him down?

We have had him for about two years now, and every time we pick him up, he opens his mouth as though to bite (but he never does). I dont like this one bit. How do I calm him down? Also, doesnt seem to like veggies at all. He eats crickets and guppies like there is no tomorrow, but my vet sutggested putting in some cilantro into his food as well, but he ignores it. He is quite healthy according to the vet so Im not too concerned, but what do I do? Thanks in advance.
