I am curious how he "wants to swim so bad"?

Varanus exanthematicus is not known to swim, generally a monitor in this situation views the water as a "secure" place, he feels safer in it. Perhaps he is dehydrated as well.

As for refusing a pinkie; that should be a clue right off the bat that something is not right. You probably have a hiccup in your husbandry somewhere, maybe not offering enough heat, perhaps its an aquarium (equivalent of a glass death trap), etc.

I would figure out why he refused food, thats a very bad sign, any healthy big lizards will try and devour anything they can.
