First of all, a hot rock should not be used unless it has a thermostat. I suggest either not using the hot rock, or buying a thermostat and keeping it on low. But if you decide to do the latter, you should test the rock by placing your own bare hand on the rock every day.
Wot kind of vegetables are you givin him? How big is his enclosure? Wot kind of light source are you using?
Carrots actually aren't all that great for iguanas. They're okay if given in small amounts every now and then, but they contain calcium oxalates which can bind calcium. I suggest looking at Melissa Kaplan's iguana page.
