I too have had the Kale / Collard problem - in Canada. I am always given Kale when I ask for Collard Greens. I finally only found them in a small health food store an hours' drive away. I decided to grow them, so I went to a very large national retail chain gardening store to buy some seeds. They brought me a package of kale seeds. I said that is not collards, and they showed me their huge supplier's resource book where it said "Collards" and clearly had a picture of kale. They thought I was nuts when I said no and left the store. So, I can tell you the difference ... Kale is curly and Collards are not. To me collard leaves have the shape of a tennis racket, and lie somewhat flat. All kinds of kale (there are many) have at least wrinkly edges and are funny shapes.
I hope this helps ... and yeah, don't I wish I lived in a tropical area too!! Or at least the lizards did.
