Very slick iguana pyramid diet by Robert Ehrig (Prez of Int'l Ig Society [1996]), and just below a list of other veggies that can be offered. I don't know if they changed the 1-3% of supplemental protein, since this book was revised twice.

So my guess is as long as you don't go overboard, u can offer it the SWEET peppers. I heard yellow is more digestible than green and red. They even happen to be rich of vitamin C, just to add a cool factor.
Due to their distinct flavor, your iguana may or may not like them. So make sure you mix them with many other things.
By the way, James Hatfield's book has great info on feeding etc.
If the ig doesn't like the peppers, you can alwyas cook them stuffed with ground beef... oh yeah, my mother makes some great stuffed peppers!
