Ok...submitted for your morbid curiosity...I worked with a nurse from Guatemala...who gave me the goods on Iguana cuisine...
They're sold in "mercados" open air markets...strung up.where customers .pick & choose which one they want. There are usually large vats of iguana meat in some sort of "stew" sold by the panful (customers must bring they're own pan & "fill er up"),There are also iguana EGG stews...much like albondigas or meatball soup...but like little softened "ping pong balls" in a tomato broth
Iguana eggs are sold by the dozen also and people take them home & boil them like chicken eggs. Iguana meat tastes more like pork sweeter than chicken. My nurse friend said she didn't care for it, but I think if ever I visit C. America...I'd give it a whirl...you know what they say what happened to the curious cat!
