Worst case senario, you get a case at a shot (a case costs me 12 bucks in milwaukee WI and contains at least 24 HUGE bunchs) prepare the collards as you would for normal daily feeding and freeze. Be sure to add some brewers yeast to help add (i think, brain is dead after day with 3 year olds) thiamin. You can easily prepare a few weeks of collards this way. Make several Zippylock freezer baggies of collards. Then thaw when needed...
Radicchio is basically another lettuce as Iguana Joe said. Not harmful, but not neccesarily the best in vitamins.
There are also several companies that make frozen collards.

:Joey doesn't particularly like it...it's the last thing he eats in his dish, but I've been unable to find collard, mustard or dandelion this time of year. Right now he eats escarole, watercress, and curly endive (along with butternut squash, parsnip and beans or peas); and these are the only greens I can get. I have asked a store to see if they could order me in some collard or mustard but they have to order in a large amount and if it doesn't sell at their store, they won't continue to order it.
