an iguana will bite if it feels very threatened and feels it is about to be harmed. they will also whip their tales. that is their form of protection. usually they give you a warning sign before they are about to do something like that. their body language is very easy to read.
even the most tame ig will bite if it feels threatened enough...just like a dog or a cat.
