I have no experience with desert igs but one thing that has worked with iguanas and bearded dragons is tempting him with some fruit he may like. Try various sweet fruits and if he likes one, put some on top of more nutritious veggies, encouraging him to eat them.
In the beginning it may be tough...my bearded dragon is the pickiest pain in the butt veggie eater of any I know! For him I have to hand feed him his greens with a thin slice of pear or apple on them. I would prefer that he like more nutritious fruits like papaya, mango, or berries, but he does not. He will shake his head violently "no" and wipe his mouth on the floor if I give him anything he doesn't like! So...I am resigned to getting some veggies in him with the method I mentioned. With any luck, yours will take better to it and you will eventually be able to offer very little fruit if any after time but he will learn to like the veggies. My other lizards have transitioned nicely. Good luck.
