Well the tough love thing is how should I put it??? TOUGH! Eventually it will probably come to that but you could let her settle in for a few more days. Christy had an idea with the food processor. I prefer not to process my stuff but in your case, maybe that would be a better way to get more in her..if she'll take it. If you add some mango to it to sweeten it up (maybe some applejuice too) It's really up to you the route you want to take. I would probably just chop everything up and mix together so she can't just pick out the fruit.
Make sure to leave her food in her cage near her favorite place so she sees it often. I know some people like for their iguana to have to get exercise to get their food, but I'm more for making sure they eat. Out of sight out of mind...Sleestack snacks on his food all day because he sees it. When I put it down out of his direct sight, he would forget to eat some days! He gets exercise anyway. I had to rig up dishes that hung up high to make them near his basking area.
