Does he like Squash? grate some butternut squash and mix it in with his salad of greens well, so that if he tries to eat some bright colored veggies, he'll get some greens no matter what.
Don't let him starve himself before giving in, it presents too much risk for illness. Some people here might not agree, but I prefer to tease them a bit with yummies to eat the good stuff. Luckily, I've never had the problem of poor eating habits to the point of getting worried. He's only been through one breeding season, and is packing on the pounds for his upcoming breeding season (eating like a pig! lol). (his breeding season seems to start in late august and run all the way through october-november)
How long has Smirnoff been with you now, about a month? It may still take some time for him to get used to you. Eventually he'll see that you aren't here to slaughter him, and he'll be goo and joy =P
