Well shedding is very good! It means she is growing. And just keep working with her...you'll tame her down. If you can not pick her up from above it would help.
As far as the eye thing, I'm sure there are people here that will disagree...but I say it is the "Is he gone yet?" type of behavior. This isn't a bad sign. This means she is taming down some. She will eventually realize she can trust you. Most of them never stop doing that from time to time anyway. And afterall, would you rather her be passive and close her eye or bite you when you pet her? Don't complain too much ;-) Remember it can take months to tame an iguana (depends on the ig).
