Spikes are probably to look tough in the wild-- and for some protection-- I wouldn't want a mouth full of spikes!

As for feeding-- bananas should rarely be fed. Maybe you can try shredding your greens very small and mixing in some fruits. Eventually he should eat. Mix and match some of the following: collards, mustards, turnip greens, dandelion, watercress, endive, escarole, hibiscus leaves, squashes, sweet potato, green beans, snow peas, and a little fruit like melon, mango, papaya, berries.

It sounds like you have a very stubborn eater. I'm guessing he was fed bad food in the past because most iguanas naturally take to most of the above diet. It was hard getting my last iguana to eat dark greens, but I just had to work with him for awhile and put stuff he liked on top-- but so he couldn't pick it off (it would stick to the greens and be too thin to pick off). Eventually he liked all his food. Sleestack has never been a problem-- he belongs to the clean plate club (3+ clean plates per day). Don't give up! Don't give in!
