My iguana picks through his food too. But he changes what he likes better then the other every couple of weeks. You may have spoiled him with fruit. I would just get him eating leaves, If he's healthy he wont starve himself to death. Personally I would take out the fruits/bannas and just leave the greens for him to eat. From all the diets that are available they all stress the importance of a few select greens (collard, dandilion, escarole, etc).
As for the spikes...I think it just makes them look cool. I dont really know why.
