Well she sounds like she would be a good iguana to take in! The socialization part sounds nice.
I cannot believe she is healthy with the care you describe...something doesn't add up! How can she have been fed no calcium rich veggies or have had no UV light exposure or heat for her entire life and still be healthy? Did you say earlier that she is small? That would be why! Anyway, don't let this post get you down...you should take her and the sooner the better. Maybe she can get some decent care now.
You will have to probably slowly transition her into a good diet. She is pretty spoiled on sweet foods and may not like the harsh greens right away. I would suggest shredding them small an mixing in fruit with them so she can't pick out her favorites. Slowly you can bring the fruit down to a minimum. She can always have a small amount anyway.
