I agree with Amy...Genetics and surroundings, but also I have read that colors can depend on the food. Such as back in the mid 90's they had the blue iguana craze where supposedly you would feed the iguana a special powder to keep their blue color. I never bought one of them, so I dont know how true it is. But I have also read that feeding them vegetables with beta caritine will also give them their nice colors. My Iguana is almost 3 years old and still retains his green color well.
