First of all, I know exactly what you're going through. I've been working with an iguana who's last owner called her "kind of a schizo lizard". :)
I have found that instead of holding her, let her sit somewhere while you pet her instead of restraining her. Hold her still if you need to, but let her feel like she's more in control.
Also, when I go after Spike in her cage, I slowly move forward to try to pet her. If she runs around like crazy, I just let her for a second and then try again. I can usually start petting her and then she lets me pick her up with little problem.
Maybe you could also try hand feeding her some treats, whatever that may be. Bathing has REALLY helped me and Spike's relationship out A LOT!!
Hopefully this will help. I'm still a newbie here, but I've been doing my fair share of learning these past couple of months. :)
