It sounds like you would be a much better owner for the iguana than the people you got it from. That poor guy, stuck in such a small aquarium with no UV... Seems that you care a lot more for the ig's well-being than they do. The book you have (you've got the one by James Hatfield, right?) will answer most of your questions, but it is pretty thick and there's a lot to read.
You're right - that is a lot of change for an iguana in such a short period of time. Let him get used to his new home for awhile, and he'll start eating again. Oh yeah, and get rid of the heat rock. Iguanas tend to burn themselves on those things. He'll also need a light that emits UVA and UVB (Zoomed Iguana Light or ReptiSun). As for food: lots of mixed greens including collards, mustard greens, escarole, endive, dandelion greens, beet greens, etc. You don't need all of them in every meal, but try to get a few of them. See which ones he likes best. Also include some other veggies like snow peas, green beans, carrot, and squash.
