I know you can freeze the veggies if you add some thiamine (brewer's yeast) to the salad after thawing, to replace most of what was lost during the freezing. GREENS like collard, mustard, all that, tend to get really mushy when they're frozen, and a lot of iguanas think that's nasty, as well as me not wanting to touch them, so I wouldn't even bother with those.
