If they solve the hand-biting with the hot sauce (some people use vinegar to keep their igs from biting their tails, might be a little safer), aggressive behavior will probably manifest elsewhere. Igs are essentially peaceful creatures and their aggression has something to do with discomfort--fear, self-defense, poor living situation, illness, etc. The best thing to do (and I know you've tried) is change the husbandry and try a little TLC.
