Because untrimmed claw tips/points can cut through skin like tiny razor blades. You only trim back the tiny, sharp pointed end of the claws, the claw points/tips, not the claw itself. If you've got enough rough surface areas for them to naturally wear down their claw tips in your enclosure, then it might not be an issue, but for most people, it is. Cutting the sharp tips off their claws does not affect their ability to climb, does not cause them any pain, and does not violate any animal protection laws that I know of.
