You want to provide moisture for them to use (via veggies or a small water bowl with cotton in it), but you really want to keep them dry. Moist is bad with crickets.
Since you keep so few at a time (I envy you, btw =)), you are probably best off slowing their metabolism by keeping them in the mid 60's if at all possible. They will eat less, grow slower (if that is an issue for you), and die off at a much slower rate.
As far as food goes, there is no reason to buy special cricket food. Since ideally you want them to have as good of a Ca/phosphorus ratio as possible, nix the apples and lettuce, and give them the scraps of the greens and veggies you use for your ig.
At any given time, I have roughly 3000 crickets and 2000 roaches around here. As you can imagine, I am highly motivated to keep them from dying en masse and really stinking up the place. It has happened before. =)
