It does take some patience and some time. I work with igs at a vet hospital, so not only am I a stranger to some of them, but they are already stressed from being in the car and then in the waiting room, etc. I've never been bit though. Basically, what I do, is s-l-o-w-l-y reach for the ig. If it puffs up, head bobs, or gets the tail in whipping position, I just stop moving my hand closer for a second. I always make sure the ig can see my hands- never sneak up on them. Eventually, I can get one hand on top of the head. They liked to be rubbed on the head. Most will "zone out" at this point- they close their eyes and pretend you are not there (just like a 2 year old human). At that point, you can start trying to touch him with your other hand. Just move very slowly and keep your voice low and gentle. If you don't have to, I wouldn't pick him up until he's a bit more calm, maybe a week or so. (Obviously, I don't have that luxury at work.) Keep him well-supported when you pick him up. They hate to
feel like they are falling. I drape my girls over my arm and shoulder. You can hold his tail with your other hand if needed. I hope this helps a bit.
