I've tried various other mixtures but I don't remember the exact components - I know I've given her green beans, papaya, carrots, kale, and some other stuff but she's never really "dug in" to any of it. She also won't really touch pellets. Somebody help! :-)

My ig won't touch butternut squash unless I cook it for him :). I do. I make a half in the microwave and store it in a container and then nuke a little bit each day. I mix the crushed calcium and a sprinkle of dry alfalfa tea (Max won't touch soaked alfalfa) in it.
You will also find what your ig liked today, it may HATE and not touch tomorrow. They do that (at least mine does). Good food for the iguana -- collard greens, turnip tops, mustard greens, endive, escarole, dandelion, butternut squash, spaghetti squash, pumpkin, parsnips (tastes like white carrots), green beans, sugar snap peas, figs, cantaloupe, berries. Fruit is only l0 percent of the diet.
My iguana likes his leave whole. He also doesn't want his food mixed -- I have to make separate little piles. I tried making him a "salad" and he doesn't like it. He will eat a salad if it's those baby greens, so I treat him once in a while.
You can also offer (in hot weather) romaine and watermelon. While these aren't too nutritious, they do contain a LOT of water, which the ig can use in the summer.
