do you have UV lighting too? that and maybe some extra exercise/free roaming might help perk up his appetite ... but it should also perk up with spring coming too ... it wouldn't hurt to make a trip to the vet and have him checked out for parasites and possibly have them do some blood work + see how his calcium levels are and kidney function etc. (i'm a mom, i'm good at worrying!)
his diet sounds pretty good (iZ luvs zuchini!)
make sure he's got cooler spots in his enclosure and climbing + hiding places, but sounds like you know what you're doing!!! *grins*
as far as the spikes go, you might want to try loosening them up a bit like iZ said ... they OFTEN end up with a couple of layers of shed and can need some extra help ... be careful tho! you will feel really baaaaad if you break one of the tips (i KNOW) ... (they bleed just enough to make you feel guilty) and there is SOME feeling in them ...
