This is one of the best questions I have seen in a long time! Not that other questions aren't good -it's just that it's apparent you're really doing some homework!
In a book written by Kymythy Schultze called "Natural Nutrition for Dogs and Cats", she addresses alfalfa at great length. Just for the record, Schultze is a Certified Clinical Nutritionist and Animal Health Instructor who is known and respected internationally. You should pick up her book if you are so inclined to learn a little more in detail.
The mixture of alfalfa and kelp are an excellent vitamin and mineral supplement. Notice I said supplement, if you are using these, you do not need to add additional calcium or vitamins unless there is specific medical reason to do so. Make sure you are using fit for human consumption grade as they are cleaner and more nutrient dense. Use both in a finely powdered form and combine in a 50/50 mix in an airtight container, store in a cool, dry, dark place. Give in small quantity in proportion to the other ingredients of the diet you are feeding.
