HI Anna,
You've come to the right place if you're going to be an adoptive mom next week. We love iguanas and can help you care for him/her well.
Don't ever feel bad about asking questions here. We're here to help. Some people on this forum have been keeping iguanas upwards of 13 or 14 years, so I consider them "pro's". Ask anything you wonder about, because chances are, there's an answer.
As far as how to keep your greens fresh longer, I've found that if I wash the collards, mustard greens etc. upon returning from the store and then lay them out in single layers flat on papertowels to absorb the moisture, and then make a pile of laid-out dried off leaves and put them in a gallon sized zip-lock baggie, they last me for a good week this way. I've never had to throw out collard greens in only four days before, but Tom said he has, so that is a possibility.
I chop squash (a few kinds at once if I have them) into small bites and keep them in a separate baggie in the fridge. I've found that if I make up a mixture of chopped stuff and greens in one baggie, it spoils MUCH faster than if I keep like things with like things. Some things spoil faster (like your soft fruits and vegetables will go bad long before your orange hard squashes will) and then they rot the whole bag. So, keep them in separate containers or bags and some stuff will last you a while and some stuff will have to be eaten sooner.
As far as her size/age, I'd say she's right about three years. But, I'm no expert on iguana sizing. I only say three years because that's right around how big my female is and she turned three last month. But Tom is right; iguanas can vary in size dramatically due to how they are cared for.
Tom was also right in saying that Kale and Chard are fine for an occasional feeding for variety, but I wouldn't feed them regularly.
You sound intelligent, articulate, thoughtful and like you're going to be a great iguana mom. They do take some work, a lot of effort and some patience, but they're worth it. It's ESPECIALLY rewarding to adopt one who has not had excellent care in the past and to turn their life around.
