I have days where my iguana barely touches anything and then other days he eats a lot. I usually do have a lot of food left over. I guess I just want to make sure there's enough there. I put a lot of bit leaves in a container (flat) of water. When he nibbles on one, he usually pulls it out of the water and then it's all limp in no time. By putting a bunch in there, there's usually a fresh crispy one if he's ready to eat again. At one of the stores I shop at, I have to buy a whole bunch of collards instead of paying by the pound. That means I usually have to throw some away at the end of the week, so I may as well put them in his water in case he wants them.
