Hubbard is fine, although hard to prep. I usually use a strong knife to split it into manageable pieces vs trying to slice it like butternut. I then use the knife to split the meat from the shell. I've fed a ton of different squashes and some of them are harder to prep than others. Lately buttercup squash has been plentiful so we've been using that.
I don't see why the radish leaves woudn't be ok since radishs are. You can also try adding cilantro, flat parsley and delery leaves for variety.
