When we visited friends in Honduras, we ate chayotes and loved them. there, they were larger, and dark green. More flavorful, too. However, I think I know the reason this variety of chayote is not available in the US... When we were going to have them for dinner one night, our hosts asked me to peel the chayotes. They had a good laugh when I was about halfway through the peeling process, and I suddenly noticed my hands turning a pale, milky white. Soon, a thin layer of skin peeled from my hands like tissue paper. No pain, no burn, no aftereffects, and nice, clean fresh looking hands after the process. Can't do it too often, though. Turns out the locals peel them with gloves on....
