:::I put out for him this afternoon was....some Collard greens, some Dandelion greens, a little butternut squash, some snow peas, and one grape, also a pinch of calcium supplement!!!! How's that?

Not bad. Better than many new-to-the-iguana-world people feed!

As far as the peas go, it's my understanding that they can/will eat the pod too, if it's cut up small enough.

Grapes aren't the best fruit for them (causes the runs in my igs). I'd go for berries of some sort. (Mine wig out for blueberries and raspberries.) But all in all, sounds like a good starter diet. Throw in some shredded yellow summer squash and maybe some occasional zucchini, too, for variety, and once in a while, a tiny bit of really ripe banana will get their appetites going. Sometimes, if Bobbit or Habib doesn't seem interested in their salad, I wave a bit of over-ripe banana in front of their noses. It just takes one small bite and then they seem to dig into their salad after that. Works every time...but don't over do it on banana. It's more like junk food for them, and shouldn't be used daily.
Just some ideas to get him/her eating
