Your salad shouldn't really stink. The only time mine stinks is at the end of the week if certain greens are starting to turn. I try to pick those out and use only the fresher looking ones. If I can't stand the smell, I usually buy more greens and throw the others out. A helpful hint in keeping the greens longer: (depends on greens but we'll say this is a good rule for these greens--collards/turnip greens/mustard greens/escarole/ endive) Buy them fresh and whole, then wash and cut up yourself into small enough pieces. Afterwards put them in large tupperware containers with several papertowels on top. Turn upside down in the refrigerator. Everytime you open you will find the paper towels soak up extra water. I change out the papertowels the first couple days until most of the excess water is absorbed. Remember to sprinkle water on the veggies again once your salad is made because hydration is good for igs. This process has helped me keep veggies fresher longer.
