Probably both reasons that you mention;
Large cages at first do tend to induce stress and defensivness, and can also bring about a whole new feeling of territoriality. I have seen this happen in many an ig.
A lot of iguanas also go through teen-aged brat times in their lives. My female was a holy terror from 2-3 and then slowly settled back down again. Now at just over 6, she's a sweetie again.
My male has not had such a bad time of being rebelious. He was only a minor pain on some days over the past year.
Every iguana's presonality is different, so there is really no telling what will happen with yours. Continue having patience, and hopefully he may come around in time.
