It is still a good idea to feed him every day. Many iguanas get their water from veggies so he may become thristy and decide to eat on a day you don't expect. It is better to be safe than sorry. On the days you don't think he will eat, just offer less food.

Mine eats two big plates per day. Once in a great while he leaves a plate of barely eats any, but most days he eats 2 plates and will eat more than that if I am home during the day to keep refilling it. He is going through so much food that I don't have enough room in the refrigerator (must make 2 trips per week)
