When the big four (collard, dandelion, mustard and turnip greens) aren't available, which happens more than you might think, we rely on supplemental greens. We use nappa cabbage, beet greens (but not the beets), flat leaf parsley, cilantro, celery leaves and kale.

No, you don't have weeds, the yellow flowers are the greens reseeding themselves, just let them do their thing and they will be fine. As far as size, ours are fairly large but no where near as large as the collards we buy at the store which are grown in Texas. Our mustard and turnip greens are also smaller but not as dramaticly as the collards.

As far as length of time in the fridge, I think that veries from house to house although I am not the best person to ask as I harvest only what I am going to use that day. Any time I have extra greens, I snip the ends and keep them in a flower vase away from direct sunlight, just like flowers. We have kept greens and herbs for roughly 2 weeks using this method, we do change the water and resnip the ends every other day or so.
